
Dancing Marlin presented another in their regular series of Chef’s Dinner Wine Pairing events on March 30, 2016, featuring exquisite wines from Small Vines Wines of California. Winemaker Paul Sloan, from Small Vines, co-hosted the wine pairing event to present handcrafted Pinot Noir and Chardonnay wines from the Russian River Valley and Sonoma Coast. The Dancing Marlin culinary team prepared a five-course dining extravaganza to pair with his specially selected wines. The Chef’s Dinner event was held in the Dancing Marlin Anchor Room, a Private Event Room located in the restaurant at their Chicago Southwest Suburban, Frankfort, Illinois location.

Shaved apple salad, “truffled” grapes, roasted shallot & Dijon vinaigrette, Camembert cheese.
Seared scallop, bay leaf butter, sunchoke puree, pickled peach jam, orange & hazelnuts.
House made fettuccini, pancetta, Parmigiano Reggiano, cracked black pepper, farm fresh egg yolk.
Colorado lamb chop, celery root & fava bean puree, demi-glace, roasted pearl onions, cherry tomatoes.
