Dancing Marlin – Hailstorm Brewery “Chef Dinner” | Chicago South Suburb Restaurant | Frankfort, Illinois Dancing Marlin joined forces with Hailstorm Brewing for a special Chef Dinner event which was held on Wednesday, February 24, 2016 at Dancing Marlin Restaurant in Frankfort, Illinois. The dining evening featured a five-course menu prepared by the Dancing Marlin culinary team which was paired with outstanding beer selections from Hailstorm Brewing, located in Tinley Park, Illinois. Guests enjoyed an interactive course-by-course description of featured menu items from the Dancing Marlin culinary team, and of beer selections from Hailstorm’s Chris Schiller and head brewer Brandon Banbury. The event was held in the Dancing Marlin’s private dining “Anchor Room”.
1st Course: Sautéed” super-white” tuna, seared polenta, Grand Marnier & honey broth, cantaloupe, pink peppercorn, ruby red grapefruit, tarragon & watercress salad. Beer Pairing: Prairie Madness IPA2nd Course: Ceviche of shrimp, lump crab, lime, cilantro, fried okra, salsa. Beer Pairing: Crash Test Dummies, (tequila barrel) 3rd Course: Coffee cured & smoked chicken wings, smoked confit of garlic, bay leaf butter, marsala. Beer Pairing: Vlad Stout (bourbon barrel aged) 4th Course: Beef tenderloin, foie gras, cream sherry mushrooms, dried leeks & strawberries. Beer Pairing: Chia Sutra Russian Imperial Stout 5th Course: Dessert – Root Beer Float. Beer Pairing: Smores Porter
